Recently,I had diced tomatoes and rice leftover in the fridge and was thinking of some way to use them up. First I was going to use them with some corn tortillas I also had to make tacos.

In the end I made Homemade tortilla chips and a salad. I warmed the tomatoes and rice and added a little taco seasoning. You could also add salsa, beans or meat.

The recipe for the chips calls for kosher salt, I used garlic salt. You could use almost any seasoning you want. By baking them and making them yourself, you can control the ingredients in them. You could also use a mixture of sugar and cinnamon for a sweet chip to use with fruit and fruit dips.
