I recently received a Pie Pumpkin in my CSA basket. I cooked it the other night and used it in a few recipes over the weekend.
The recipes were all easy to make and tasted great. They can all be made with either fresh pumpkin or canned pumpkin. Extras can be frozen to be used later.
I have also made this recipe for Pumpkin Scones several times in the past couple of years. They are not dry like you may think scones usually are.
