Salad ideas

Now that summer has finally arrived, it is lettuce time for many gardens, unless they got flooded out by our recent rains. I got spinach, leaf lettuce, cucumbers, and a tomato in my latest CSA box.

Recently I saw this recipe for Bacon and Pepper jack salad on the blog Good Cheap Eats. I made a similar salad with items I had on hand. I used lettuce, spinach and cucumber from the CSA. Additional ingredients I added were crumbled bacon, carrots, beans, pepper jack and cheddar cheese and chowmein noodles for extra crunch. I was going to add tomatoes but forgot them. If you have ingredients on hand, making a salad is a easy light meal.

I used a homemade French dressing I have been making the past few months. There are various recipes available online for making homemade dressings.

Following is the dressing recipe I have been using.

1 cup sugar
1 cup ketchup
1 cup vegetable oil
1 Tablespoon celery salt
½ teaspoon hot pepper sauce
2 cloves garlic
½ cup white vinegar.

Combine in a container and mix well.

I have been using hot pepper flakes instead of the Tabasco sauce.

When making your own dressings you know what ingredients are in them and can tailor the spices to your tastes.
