Over the weekend, I cooked a few chicken breasts in the crockpot to use in other recipes. I had part of a bottle of barbeque sauce that I added a little water to and also added some pineapple chunks that I had in the freezer.

One of the recipes I am going to try is based on this Chicken Parmesan casserole. Since the chicken is already cooked, it will only need to be cooked enough to warm the ingredients.

Instead of buying croutons, I made my own. I cut about four – five slices of bread into cubes and tossed with oil and seasoned salt.

I also dry stale bread and crush to make bread crumbs.
