Last week I got my first pumpkin of the season in my CSA box. I roasted it in the oven for about 1 hour. I coated it with vegetable oil instead of the coconut oil as suggested, since that is what I had on hand.

This week there are two people celebrating birthdays that I usually make a cake for. I made this Pumpkin roll and it was a big hit. I substituted chopped walnuts for the pecans since that’s what I had.

The only thing I needed to buy was the cream cheese. I stopped at SunMart yesterday to get some and was pleasantly surprised to see it was on sale. I wasn’t looking for it when I scanned the ad earlier. Philadelphia cream cheese is on sale (thru Sat 10/6) 3/$2. The three packages are cheaper than the regular price of one. Cream cheese is one of the items I stock up on and freeze for later. The texture is not usually the same once it is thawed but it works for cooking or baking.

Also, last night I made these pumpkin mini muffins. Today I made pumpkin scones. I had made them last year and enjoyed them.

I have a few containers of pumpkin left that I put in the freezer to use in future recipes.
